2 cups whole wheat flour (I like the lighter varieties for this recipe, either white whole wheat flour or pastry flour)
1 tablespoon grated orange peel
2 teaspoons baking powder
½ teaspoon salt
¼ teaspoon baking soda
⅓ cup cold butter
1 cup dried cranberries
¼ cup orange juice (about the juice of 1 orange)
¼ cup milk
1 tablespoon pure maple syrup
Instructions
Preheat oven to 400 degrees.
Mix flaxseed with the hot water in a small bowl, set aside (you can also use 1 egg for this part if you don't have an egg allergy in the house like we do)
In a food processor combine flour, orange peel, baking powder, salt and baking soda. Pulse 3-4 times.
Add butter and pulse 6-7 times, until it resembles coarse crumbs (Alternatively you could combine dry ingredients in a bowl and cut in butter using pastry cutter or two knives).
In a separate bowl, combine flaxseed mixture, cranberries, orange juice, milk, and syrup. Add to food processor and mix until a soft dough forms.
Move dough to floured surface and knead 6-8 times. Shape dough into a round disc and cut into 10 equal wedges.
Separate wedges and bake on an ungreased baking sheet for 12-15 minutes or until lightly browned.
