Wednesday Real Food Recipe - Whole Wheat Dinner Rolls

  • 1 tablespoon yeast
  • ½ cup warm water
  • 1 cup milk
  • ¼ cup honey
  • ¼ cup butter
  • 1 teaspoon salt
  • 3 to 3-1/3 cups white whole wheat flour
  • 1 egg
  • Melted butter
Instructions
  1. In a small bowl, soften yeast in water and set aside.
  2. In a saucepan, melt butter and honey together. Don't let this get too hot!
  3. When butter and honey are almost melted, add milk and salt and remove from heat once slightly warmed through.
  4. Pour milk mixture into a large bowl and whisk in 1 cup of the flour.
  5. Add softened yeast and egg and mix well.
  6. Gradually add remaining flour to form a soft dough (a dough hook on a stand mixer works well for this, but I like to knead the flour in by hand).
  7. Cover and let rise until double, about 1-1/2 to 2 hours.
  8. Divide dough into 12 pieces and form into rolls.
  9. Dip each roll in melted butter and put in pan.
  10. Allow to rise until double again.
  11. Bake at 370 degrees for about 20 minutes, until slightly golden.
