Blend buckwheat groats in a high-speed blender until ground into a flour.
Add remaining ingredients and blend until combined. It can be helpful to remove the buckwheat flour and then add it back it so it doesn't stick to the bottom of the blender.
Heat a crepe pan over medium-high heat and coat with a little butter.
Pour about ¼ cup batter onto pan, then swirl the pan to spread the batter into a thin layer.
Cook until lightly browned, about one minute, then carefully flip.
Cook for about a minute on the second side.
Repeat with the remaining batter, adding butter to the pan when needed.
Fill with your favorite fillings and enjoy!
