Apricot Fruit Leather

Easy Lunchbox Favorite

Ingredients
  

  • 2 pounds Fresh apricots, pits removed
  • 1/2 cup honey raw is best

Instructions
 

  • Line a baking sheet with parchment paper.
  • Preheat oven to 170 degrees.
  • Combine apricots and honey in a pan on the stove over medium heat, stirring often.
  • Cook about 15-20 minutes, until apricots have broken down and the mixture has darkened in color.
  • Puree the fruit with a stick blender, or in a regular blender or food processor. Be careful, it’s hot!
  • Spread evenly and thinly on the baking sheet, taking care to stay away from the edges of the parchment.
  • Bake for 6-11 hours depending on oven temperature and the thickness of your fruit leather.
  • The fruit leather is done when it is slightly tacky in the center and it peels off the parchment easily.
  • Allow to cool completely before cutting into strips. Leave the parchment paper on until ready to eat.
  • Store for 2-3 weeks in the pantry, or up to a year in the freezer.
