Breakfast Cauliflower Egg Casserole

Ingredients
  

  • 1 cup Cauliflower florets chopped
  • 7 Eggs
  • 1/2 cup Almond milk unsweetened
  • 1 tbsp Nutritional yeast
  • 1 tsp Garlic powder
  • 1 tsp Salt
  • 1 cup Baby spinach chopped

Method
 

  1. Preheat over to 375 degrees
  2. Bring a pot of water to a boil. Add the cauliflower florets and cook until fork tender. Rinse with cold water and set aside.
  3. Whisk together eggs, almond milk, nutritional yeast, garlic powder, salt, and chopped spinach.
  4. Add cauliflower florets and pour into baking dish.
  5. Bake for 40-45 minutes.
  6. Let cool for 5 minutes prior to serving.

Notes

To make this recipe even simpler, toss in a cup of frozen cauliflower rice, no need to cook in the boiling water.
This recipe reheats very well! It's a great one to make at the beginning of the week for breakfast for about 3 days.
