Preheat over to 375 degrees
Bring a pot of water to a boil. Add the cauliflower florets and cook until fork tender. Rinse with cold water and set aside.
Whisk together eggs, almond milk, nutritional yeast, garlic powder, salt, and chopped spinach.
Add cauliflower florets and pour into baking dish.
Bake for 40-45 minutes.
Let cool for 5 minutes prior to serving.
