Today is going to be one of those days. You know the days where you just run and run from one thing to the next, hoping you’ll find a chance to take a breath somewhere in the middle of the madness? Tonight I work until 5:30, and Marquis will get home from work around 5:50 and then we have to leave right away to get to parent/teacher conferences at 6:00. Marquis also is one of the Boy Scout leaders in our neighborhood and they have an activity starting at 6:00. Yes, he will be late. We should get home from the P/T conf by 6:15 or so and I need to have a meal completely ready for him to quickly eat before running out the door again. I start work again at 6:30, so it better be fast for the rest of us, too!
Thankfully we planned ahead. Yesterday I put 2 chicken breasts in the slow cooker with 1 cup of chicken broth and this recipe for taco seasoning. In a few hours I’ll put that cooked, shredded meat back in the slow cooker just to warm it up, and then we’ll throw it in some tortillas with lettuce, tomato, green onions and avocados. Yum! It doesn’t get better, or faster, than that!
I “met” Jeannine from Eubanks Eutopia awhile back because we seem to run in the same online circles, and it was like we were kindred spirits. (Yes, I just got all Anne Shirley on you. And if you don’t know what I’m talking about, then shame on you! Go read Anne of Green Gables right now!) Anyway, I love Jeannine, and I love this recipe. I’ve even already shared it very briefly once before, but that was just a blip in one of my menu posts and I thought it deserved it’s very own post.
Please never buy taco seasoning in a packet ever again! If you want, you can make up a huge batch of this and just use it when you need it, that is at least as easy as those packets and you get to miss out on all the MSG and other gross chemistry lab ingredients that mess with your body. Plus you probably have all these things sitting in your spice cabinet already, nice!
This recipe works well in ground taco meat, but I use it most for shredded tacos, probably because that is what we make most often. Check out the recipe here and say a little hello to Jeannine!
