Breakfast Cauliflower Egg Casserole

Ingredients
  

  • 1 cup Cauliflower florets chopped
  • 7 Eggs
  • 1/2 cup Almond milk unsweetened
  • 1 tbsp Nutritional yeast
  • 1 tsp Garlic powder
  • 1 tsp Salt
  • 1 cup Baby spinach chopped

Instructions
 

  • Preheat over to 375 degrees
  • Bring a pot of water to a boil. Add the cauliflower florets and cook until fork tender. Rinse with cold water and set aside.
  • Whisk together eggs, almond milk, nutritional yeast, garlic powder, salt, and chopped spinach.
  • Add cauliflower florets and pour into baking dish.
  • Bake for 40-45 minutes.
  • Let cool for 5 minutes prior to serving.

Notes

To make this recipe even simpler, toss in a cup of frozen cauliflower rice, no need to cook in the boiling water.
This recipe reheats very well! It’s a great one to make at the beginning of the week for breakfast for about 3 days.
