I can never, ever, ever get enough ice cream. Ever. Of course, the problem is that my hips sure can get enough, and commercial ice cream is full of a bunch of questionable ingredients. Thankfully, I’ve discovered banana “nice” cream, and I’ve been playing with lots of different recipes. This one is definitely my favorite (so far)!
First things first, you can’t have banana nice cream without frozen bananas, and lots of them. I love to buy the marked-down “baker’s bananas” at the grocery store. I then take them home, cut them into chunks, and freeze them.
Once they are frozen, I transfer them to a big zipper bag for longer-term storage. Not that they stay in the freezer very long, we eat them too fast!
I also love to have frozen cherries on hand at all times. They are great in smoothies, awesome in muffins, and great to throw in lunchboxes. And when blended with the bananas, they make super delicious “nice” cream!
If you have never had nice cream before, there is something magic that happens when you blend up frozen bananas. After a minute or two, it becomes the consistency of soft-serve ice cream. I always feel like a bit of a magician when I make nice cream, abracadabra!
And for my next trick, I’m going to make this yummy nice cream disappear!
- 4 bananas, chopped and frozen
- 2 cups frozen cherries
- 1-1/4 cup milk or coconut milk (you may need a little less or more liquid depending on the power of your food processor or blender)
- Chocolate chips or other mix-ins (optional)
- Blend bananas and cherries in blender or food processor, adding milk little by little and scraping down side of bowl until it reaches the consistency of soft-serve ice cream. Add chocolate chips or other mix-ins and pulse just enough to combine.
