Cheap, fast, easy, yummy, does it get any better than this? The best part about sandwiches is that you can make all the parts ahead of time and just quickly assemble when it’s time to eat. For the chicken, any time I see chicken on sale I grab a whole bunch and bring it home. Half goes into the freezer and half goes into the slow cooker. Once it’s cooked I shred it and freeze it, so I always have cooked chicken on hand. If I somehow run out I’ll just throw some in the slow cooker in the morning, super easy! You could also use chicken left over from another meal or a rotisserie chicken from the grocery store. I like to serve this on my easy whole wheat focaccia.
Chicken salad sandwiches

Ingredients
- 1 cup cooked chicken
- 4 oz full fat cream cheese, left out to soften
- ½ cup plain whole milk yogurt
- ½ cup chopped celery
- ½ cup sweet stuff, I like dried cranberries, halved fresh grapes or diced apples (optional)
- garlic salt
- pepper
Instructions
- Combine chicken, cream cheese, yogurt, celery and sweet stuff. Stir well.
- Add garlic salt and pepper to taste.
- Serve on your favorite bread, in a tortilla for a wrap, or on a lettuce leaf.
